Within
Japanese Kitchen are three different ways to
dine. This may involve the locally famed Sushi
Bar, the traditional sit down dining or seating
for over 200. In total there is seating capacity
for upwards of 200 guests at any one time. In
addition to these wonderful options to enjoy
a meal with family or friends is the cocktail
bar.
Here is some information that may enhance your dining experience:
Teppan Yaki
Teppan Yaki means literally “Cooked on an Iron
Skillet”. It is undoubtedly the most popular
of formats chosen when seeking an authentic
Japanese restaurant. It is this culinary showmanship,
performed in front of thousands of weekly guests,
that has contributed to the reputation of Japanese
Kitchen being a great dining destination. Fresh
slices of marbled beef, teriyaki and hot/spicy
chicken, lobster, scallops, calamari, shrimp,
vegetables, fried rice and other items are individually
prepared and served. There are 15 Teppan chefs,
each with their own distinctive flair, you’ll
be sure to receive a different show each time
you visit. As head chef Susanto Taslim will
attest it’s another reason why Japanese Kitchen
is touted as “dinnertainment” and a “meal in
a show”.
Sushi
Sushi dining has increased in significant popularity
in Fresno, the west coast and across the United
States. It has earned the reputation as the
most famous Japanese dish outside of Japan.
But it is still one of the most popular dishes
among the Japanese themselves. When one speaks
about the quality of sushi mostly it is in reference
to its freshness. For most of the highly successful
restaurants such as Japanese Kitchen, the fish
used in sushi is of the highest quality and
freshness. At least three times a week this
fresh seafood is delivered from ports near and
far. In any typical week more than 1,000 pounds
to several hundred pounds of fish. The best
way to determine the freshness of sushi is by
its color. The most highly sought after restaurants
will display their sushi in a showcase format.
Most all sushi is eaten in a similar fashion
in that a corner is dipped in a shallow bowl
that generally contains soy sauce and a small
amount of wasabi. The more popular items found
in sushi bars include the following dozen items:
Tuna, cooked shrimp, salmon, halibut, albacore,
yellow tail, striped bass, snapper, octopus,
mackerel, crab and egg omelet. At Japanese Kitchen
head sushi chef Koji Ogawa observes that the
three most popular house specials include the
seaweed salad along with two custom sushi rolls:

Traditional Dining
Traditional Dining within Japanese Kitchen is found amongst a backdrop of large aquariums, wooden paneled walls and also in a private banquet room. The delicious choices that are prepared in the kitchen include popular items like baked lobster or grilled chicken, seafood or steak. Golden tempura with fresh vegetables and seafood is also popular for both lunch and dinner. An old world laquerware box is the serving vessel for many other combination lunch and dinner choices. One of the most popular items for a romantic meal is the Love Boat Dinner which includes soup, salad, steamed rice, California roll, stuffed lobster, grilled chicken, beef roll, steak, egg roll, shrimp tempura and dessert.
